Rice Crust Pizza

Crust:
2 cups cooked long grain rice, such as basmati
1 egg, beaten
1 cup grated mozzarella or cheddar cheese
Topping:
tomato sauce, with spices of choice mixed in
favourite pizza toppings
grated cheese

     Mix crust ingredients thoroughly by hand - perfect for a child to do!  Press evenly on pizza pan or cookie sheet to form base with 1/2 inch high edges. Bake at 350 F until set, about 12 minutes.

      Top first with tomato sauce, then pizza toppings and finally with grated cheese - more fun for a child. Bake again until cheese on top is bubbly, about 15-20 minutes. Enjoy hot or cold (at a picnic).

 (The editors were wondering if the pizza could be done without cheese by adding more egg to the crust and leaving the cheese off the top. If you experiment with success, let us know.)
